Grace's Apple Pie


Description:
An apple pie recipe I continually experiment on.

Ingredients:
Crust:
2 cups flour
1 tsp salt
2/3 c butter
ice water

Filling:
 8 cooking apples, diced (not Fuji; I combine Washington Reds and Granny Smiths. you can also use Golden Delicious)
1 c packed brown sugar
cinnamon
about 1/2 tsp nutmeg
squeeze of lemon juice
about 1/3 c flour
(Honestly, I eyeball it as I go along, so I don't know the exact measurements. For me, the pie should be sweet but slightly tart.)

Directions:
Crust:
Combine flour and salt. Cut in butter. Add enough ice water till it turns into a ball; chill for 15-30 minutes
Roll out half then put into a pie pan, prick with fork, back in the ref to chill.

Filling:
Combine all ingredients.

Assembly:
Place filling in pie crust, roll the other half of the dough into a circle, place on top, crimp the edges prick with fork.

Bake for 1 hour or so in a hot oven (400 degrees or so). Let cool completely.

Sometimes I add nuts or raisins, use a crumb crust on top, or whatever whim hits me.
