Description:
We served this at our company's tenth anniversary. It's pretty easy, especially if you have an assembly line.
Ingredients:
Fita crackers
tomatos
mayonnaise (we used Kraft Miracle Whip cos it tastes good, but you can use whatever mayo or sandwich spread you prefer)
sweet pickle relish
cheese
Directions:
Arrange the Fita on a tray. Slice the tomato very thinly. It's easier to slice thinly if it's not fully ripe. Or use a mandolin. If you're not going to serve right away, pat the tomato slices dry so they won't make the cracker soggy. Otherwise, skip that step. Then slice the cheese into thin litte squares.
On top of the Fita, add in this order:
1 slice tomato
1 dollop of mayo
a teeny bit of pickes
a small slice of cheese
That's it! Serve and enjoy!
hey Jan, great idea about using a cucumber - that could work too. And don't hold any hopes up about seeing my recipes for chocolate cake, apple pie, choco-chip scones, or bundt cake. Those are highly guarded secrets! Peace!!! c",)
