Gracie's Mango Cheesecake



Description:
I made this recipe since I was looking for an alternative to blueberry. Since mango is readily available here, that's what I ran with.

Ingredients:
Crust:
1-1/4 cups graham cracker crumbs
2 Tbsp sugar
1/3 cup melted butter

Filling
10 ounces cream cheese (1-1/4 box)
1/2 cup powdered sugar (confectioners sugar)
1 tsp vanilla extract
1/2 tsp lemon juice
1 cup cream

Topping:
1 envelope unflavored gelatin (Knox)
1 c mango juice (for this batch though, I used Minute Maid Pulpy Mango Orange)
1/3 c brown sugar
3 mangoes, diced

Directions:
Crust:
Combine all ingredients and press on the bottom and sides of the pan. Chill while preparing the filling.


Filling
Beat together the cream cheese, sugar, vanilla and lemon juice in a bowl until smooth.

Lightly whip the cream, and then fold it into the cream cheese mixture. Spread onto the crust. Set in the refrigerator, preferably overnight.

Topping:

Dissolve the gelatin and sugar in the mango juice. Heat gently. Pour over the mangoes. Cool, stirring every half hour, until gelatin thickens. Spread over the filling.
