Orange Chocolate Chip Scones
Description:
This is based on a recipe by Sarah Ferguson, the Duchess of York. I tweaked it a little, adding orange zest and more water.
Ingredients:
1 3/4 c all-purpose flour
1/3 c granulated sugar
2 tsp baking powder
1/2 tsp salt
5 Tbsp unsalted butter (cold, cut into bits)
1/2 c chocolate chips
Zest and juice of one orange
Cold water as needed
Directions:
Preheat the oven to 400°F.
In a large bowl, sift together the flour, sugar, baking powder, and salt.
With a pastry blender or a large fork, cut in the butter to make coarse crumbs.
Stir in the chocolate chips and orange zest.
Mix in the orange juice. If necessary, add cold water a tablespoon at a time just enough to form a ball. Do not overmix.
Turn the dough out onto a floured surface. Pat or roll into a 9-inch circle about 1/2-inch thick. Cut out 12 scones and transfer them to a prepared baking pan.
Bake until golden brown, about 12 minutes.
